What You’ll Need

For the dressing
● 1 cup mayonnaise
● 1/2 cup olive oil or walnut oil
●2 tablespoons apple cider vinegar
●1 teaspoon yellow mustard
● 1 teaspoon salt
● 1/3 teaspoon cayenne pepper

For the salad
● 2 heads cauliflower
● 4 eggs, hard-boiled and diced
● 2 Avocado, small cubes
● 1/2 a medium sized red onion, finely diced
● 6-8 celery stalks, finely diced
● 3 dill pickles, diced
● Ground pepper to taste


Wash and cut cauliflowers into large florets then steam for about 10 minutes (You want the cauliflower to be tender but not mushy) Add in the sliced avocado and the rest of the salad ingredients Sprinkle some ground pepper and toss it up
Mix all of the mayo dressing in a small bowl
Add in the eggs and drizzle the mayo dressing
