Heather Jacobsen is working to unravel the health and science behind gluten and grains, while also building tools for a gluten-free/paleo lifestyle. Over the course of a decade, she has learned way more about nutrition, then she had ever set out to do. And now she is working to share this knowledge with others.
As founder of the community website, Stuffed Pepper, she encourages community engagement and discussion with recipe sharing, opinion posts, health articles and more. Heather has also designed a 30-day step-by-step program, helping newbies get on the path to better health with gluten-free, dairy-free, paleo recipes, that showcase the talent of contributing chefs and community members at Stuffed Pepper.
Heather is also a mother of two young children (Luke and Ava), who also eat gluten-free and (mostly) paleo and who also share video recipes (so easy a kid could make!) on Stuffed Pepper. In addition, Heather is an avid photographer, with food photos starting to dominate her nature and travel images.
Heather holds a Master of Science from the University of Kent at Canterbury, and a BA from the University of Virginia. She has previously worked at Fairchild Tropical Botanic Garden and the National Academy of Sciences, and has lived and worked overseas. Heather has been gluten-free (GF) since 2001 and paleo since 2010.
